Instructions
 

  • Wash and dry rocket leaves using a salad spinner or pat dry with paper towels.
  • Prepare the ingredients: Halve cherry tomatoes, slice dried figs, and shave the cheese.
  • Toast the pine nuts in a dry skillet over medium-low heat until golden brown.
  • Assemble the salad: Place rocket leaves in a large bowl, then add cherry tomatoes, toasted pine nuts, and sliced dried figs.
  • Make the dressing: Whisk together olive oil, balsamic vinegar, minced garlic, honey, salt, and pepper.
