Total Time 45 minutes

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup vegan butter or coconut oil
  • 1 cup brown sugar
  • ¼ cup plant-based milk almond, oat, or soy
  • 1 tbsp vanilla extract
  • 1 tbsp flaxseed meal + 3 tbsp water (flax egg)
  • 1 cup vegan chocolate chips or mix-ins nuts, dried fruit, etc.

Instructions

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Prepare flax egg by mixing flaxseed meal and water; let sit for 5 minutes.
  • Mix dry ingredients: In a bowl, whisk together flour, baking powder, and salt.
  • Cream butter & sugar: In another bowl, beat vegan butter and sugar until light and fluffy.
  • Add wet ingredients: Stir in the flax egg, plant-based milk, and vanilla extract.
  • Combine wet and dry ingredients, mixing until a soft dough forms.
  • Fold in chocolate chips or preferred mix-ins.
  • Scoop dough onto the baking sheet, making large cookie mounds (about 4-6 oz each).
  • Chill dough for at least 30 minutes (optional but recommended for the best texture).
  • Bake for 12-15 minutes until edges are golden brown but centers remain soft.
  • Cool on the tray for 5 minutes before transferring to a wire rack.

Notes

  • For gluten-free cookies, substitute all-purpose flour with a gluten-free 1:1 baking blend.
  • Adjust the sweetness by reducing sugar or using coconut sugar.
  • Add a sprinkle of sea salt on top for extra flavor.
