- 2 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ¾ cup vegan butter or coconut oil
- 1 cup brown sugar
- ¼ cup plant-based milk almond, oat, or soy
- 1 tbsp vanilla extract
- 1 tbsp flaxseed meal + 3 tbsp water (flax egg)
- 1 cup vegan chocolate chips or mix-ins nuts, dried fruit, etc.
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Prepare flax egg by mixing flaxseed meal and water; let sit for 5 minutes.
Mix dry ingredients: In a bowl, whisk together flour, baking powder, and salt.
Cream butter & sugar: In another bowl, beat vegan butter and sugar until light and fluffy.
Add wet ingredients: Stir in the flax egg, plant-based milk, and vanilla extract.
Combine wet and dry ingredients, mixing until a soft dough forms.
Fold in chocolate chips or preferred mix-ins.
Scoop dough onto the baking sheet, making large cookie mounds (about 4-6 oz each).
Chill dough for at least 30 minutes (optional but recommended for the best texture).
Bake for 12-15 minutes until edges are golden brown but centers remain soft.
Cool on the tray for 5 minutes before transferring to a wire rack.
- For gluten-free cookies, substitute all-purpose flour with a gluten-free 1:1 baking blend.
- Adjust the sweetness by reducing sugar or using coconut sugar.
